The original one, of course. I really need to start some re-watches again.
As you may know, I'm a big fan of Shatner, Nimoy et al. The original series was my favorite, and one of my top three loves of all time. Cartoon was OK. Shatner / Nimoy movies were OK. Hated TNG, hated DS9, managed to sit through Voyager and Enterprise, hated everything that came after that.
What about you?

Hi Shelby! I must admit that I am not very much into science fiction (I prefer D&D type). But I just saw the first episode of the new Picard serie, in Amazon Prime, and... it just lighted a spark! I think I will continue watching it!!!!

Hm, I didn't know Picard was on Amazon Prime. Maybe not here in the USA, where it's on CBS All Access. What are the things that you like about Picard? And what are the things about fantasy that you like, that you don't normally get from science fiction?
Let me think, what do I like about fantasy, and what do I like about science fiction?
For fantasy, I've got The Lord of the Rings firmly in mind. Then books like Fafhrd and the Grey Mouser, from Fritz Leiber. And of course the stories from Norse and Greek mythology. Swords, sorcery, monsters, legends, bravery in the face of death. Escapism, rooting for heroes or shuddering at villains.
For science fiction, I'm a child of the 1960s space race. My earliest dreams were of space exploration. As a child, I watched the original Star Trek during its first airing on television. Those guys were acting out my dreams, and I got to ride along. I discovered so much more classic science fiction as I grew up. SF features exploration, interaction with alien ways of thinking, and consideration of how future technology will affect our lives, along with the "bravery in the face of death, escapism, rooting for heroes or shuddering at villains" that I get from fantasy.

From an online conversation I had a little while back:
I'm not a fan of Star Trek: TNG, and I went from being a Roddenberry endorser in my younger days to learning more about him and his decisions, and how often I disagreed with them. So the TNG era is not for me. I often wax nostalgic for those fan years that spanned the sixties and seventies. Those were truly the golden years of Trek fandom. We wrote about our favorite characters, and made images of our favorite ships and props and costumes, and there were no Trek versions of "edition wars." We had hundreds of fanzines and novels and countless toys, we had our conventions and our filk songs. The Star Trek I love lives on in spite of Roddenberry's judgement calls. But to each their own. Yes, even the Star Wars fans, poor misguided fools that they be. ;-)
Catch a glimpse of what it was like back then:
